  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 pound bowtie pasta
  • 4 tablespoons butter, divided
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 8 ounces Velveeta cheese, cubed
  • 4 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese
  • Salt, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente. Drain and set aside.
  2. While the pasta cooks, heat 2 tablespoons of butter and olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with Cajun seasoning, garlic powder, onion powder, Italian seasoning, black pepper, and salt. Cook for 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove and set aside.

  1. In the same skillet, melt the remaining butter and add minced garlic. Sauté for 1 minute until fragrant. Reduce the heat to low and stir in Velveeta, cream cheese, heavy cream, and chicken broth. Whisk until the cheeses melt and the sauce becomes smooth and creamy.
  2. Return the cooked chicken to the skillet along with the drained pasta. Toss until everything is evenly coated in the rich, cheesy sauce.
  3. Sprinkle mozzarella and Parmesan into the skillet and stir until melted and gooey. Adjust seasoning with salt if needed, and serve immediately.

Notes

Cut chicken evenly for uniform cooking. Use fresh garlic for the best flavor. Add reserved pasta water to loosen the sauce if needed. Finish with fresh herbs for brightness.
